Recipe 1: Grilled Salmon Steaks with Savory Blueberry Sauce

Ingredients:
1/2 cup chicken stock 
1/4 cup balsamic vinegar 
1/4 cup orange juice 
1 teaspoon honey 
1 tablespoon cornstarch 
1/4 cup chicken stock 
1 cup fresh blueberries 
2 teaspoons chopped fresh chives 
4 (6 ounce) salmon steaks 
2 tablespoons olive oil 
salt and pepper to taste

Directions:
1. Pour 1/2 cup chicken stock, vinegar, orange juice, and honey into a saucepan. Bring to a boil over high heat, then reduce heat to medium. Dissolve cornstarch in 1/4 cup of chicken stock, and stir into the simmering sauce. Cook and stir until the sauce thickens and turns clear, 1 to 2 minutes. Stir in the blueberries and chives, and keep warm over low heat.
2. Preheat grill to medium high-heat.
3. Brush salmon with oil, and season to taste with salt and pepper. Grill until the fish flakes easily with a fork, about 3 to 4 minutes per side. Serve with blueberry sauce.

Recipe 2: Grilled Salmon Steaks Italian-Style

Ingredients:
2 salmon steaks 
1 tablespoon dried Italian seasoning 
1 teaspoon crumbled dried thyme 
1 teaspoon crushed dried rosemary 
salt and pepper to taste 
1 tablespoon fresh lime juice

Directions:
1. Preheat an outdoor grill for medium heat and lightly oil grate.
2. Season one side of each steak with the Italian seasoning, thyme, rosemary, salt, and pepper.
3. Lay the steaks with the seasoned-side down on the prepared grill. Cook on grill until the flesh flakes, turning once, 7 to 8 minutes. Sprinkle each steak with lime juice to serve.

Recipe 3: Baked Salmon Steak

Ingredients:
1/4 cup olive oil 
2 salmon steaks 
1 tablespoon garlic salt, or to taste 
1 tablespoon onion salt, or to taste 
1 tablespoon paprika, or to taste 
1 1/2 teaspoons ground black pepper, or to taste 
1 1/2 teaspoons salt, or to taste 
1 tablespoon chopped chives 
2 teaspoons chopped fresh thyme 
4 leaves fresh spinach 
1/4 cup Parmesan cheese

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking dish with olive oil.
2. Pour 1/4 cup olive oil in a shallow bowl and dip salmon steaks in oil to coat. Stir garlic salt, onion salt, paprika, black pepper, and salt together in a small bowl; sprinkle seasoning onto salmon. Place salmon steaks into the prepared baking dish and sprinkle with chives, thyme, and spinach leaves. Sprinkle Parmesan cheese over the fish and seasonings.
3. Bake in the preheated oven until the salmon is cooked through and the flesh flakes easily, about 45 minutes.

Recipe 4: Salmon Steaks with Soy-Maple Glaze

Ingredients:
1/4 cup soy sauce 
3 tablespoons pure maple syrup 
3 tablespoons Asian sesame oil 
Four 8-ounce wild salmon steaks, cut 1 inch thick 
One 2-inch piece of fresh ginger—peeled, thinly sliced and smashed 
2 garlic cloves, smashed 
2 scallions, thinly sliced

Directions:
1. In a large, shallow dish, whisk the soy sauce with the maple syrup and sesame oil. Add the salmon steaks and turn to coat. Press the ginger and garlic onto both sides of the steaks. Cover and refrigerate for 2 hours, turning the salmon a few times. 
2. Light a charcoal grill. Remove the salmon from the marinade. Pour the marinade into a small saucepan and boil over high heat until syrupy, about 3 minutes. Strain the glaze into a small bowl. 
3. Oil the grate and grill the salmon over moderately high heat for 6 minutes, rotating the steaks slightly after 2 minutes to make crosshatches, if desired. Turn the steaks and grill for 6 minutes longer. Transfer to plates and spoon the glaze on top. Sprinkle with the scallions and serve.

Recipe 5: Tarragon Salmon Steaks

Ingredients:
2 salmon steaks (about 1 inch thick) 
2 tablespoons butter, melted 
2 teaspoons lemon juice 
1 tablespoon minced fresh tarragon 
1 tablespoon minced fresh parsley 
Salt and pepper to taste

Directions:
1. Place salmon steaks in an ungreased 13-in. x 9-in. baking dish. Drizzle with butter and lemon juice. Sprinkle with the tarragon, parsley, salt and pepper. 
2. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork. 

Recipe 6: Seasoned Salmon Steaks

Ingredients:
6 salmon steaks (1 inch thick and 6 ounces each) 
1/2 cup butter, melted 
2 teaspoons seasoned salt 
2 teaspoons Italian seasoning 
2 teaspoons lemon juice 
1/2 teaspoon garlic powder 
1/2 teaspoon grated lemon peel 
Dash cayenne pepper

Directions
1. Place salmon on a greased broiler rack. Broil 4-6 in. from the heat for 8-10 minutes. 
2. Meanwhile, combine the remaining ingredients. Brush some over some over salmon. Turn and broil 10 minutes longer or until fish flakes easily with a fork. Baste with remaining butter mixture.

Recipe 7: Confetti Salmon Steaks

Ingredients:
2 salmon steaks (6 ounces each) 
1/2 teaspoon Worcestershire sauce 
1/2 teaspoon lemon juice 
1/2 teaspoon Cajun or Creole seasoning 
1/4 teaspoon salt, optional 
1/2 cup diced green pepper 
1/2 cup diced sweet red pepper

Directions:
1. Place the salmon in an ungreased 8-in. square microwave-safe dish. Rub with Worcestershire sauce and lemon juice; sprinkle with Cajun seasoning and salt if desired. Sprinkle peppers on top. 
2. Cover and microwave on high for 5-1/2 to 6 minutes, turning once, or until fish flakes easily with a fork. Let stand, covered, for 2 minutes.

Recipe 8: Grilled Salmon Steaks

Ingredients
2 tablespoons white wine vinegar 
2 tablespoons sugar 
1 tablespoon dill weed 
3/4 teaspoon salt 
1/8 to 1/4 teaspoon pepper, optional 
4 salmon steaks (1-inch thick and 6 ounces each)  
3 tablespoons mayonnaise 
3 tablespoons Dijon mustard 
3 tablespoons dill weed 
1 tablespoon sugar 
4 teaspoons white wine vinegar 
1/4 teaspoon pepper, optional

Directions:
1. In a large resealable plastic bag, combine the first five ingredients. Add salmon; seal bag and turn to coat. Refrigerate for 1 hour, turning occasionally. 
2. In a small bowl, combine the sauce ingredients; cover and refrigerate until chilled. 
3. Discard marinade. Grill salmon, covered, over medium heat for 6-7 minutes on each side or until fish flakes easily with a fork. Serve with mustard dill sauce.

Recipe 9: Creamy Dill Salmon Steaks

Ingredients:
1/2 cup chopped green onions 
1 tablespoon butter 
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted 
1/2 cup half-and-half cream 
2 tablespoons white wine or chicken broth 
2 tablespoons chopped fresh dill or 2 teaspoons dill weed 
4 salmon steaks (1 inch thick)

Directions:
In a large skillet, saute the onions in butter. Add the soup, cream, wine or broth and dill. Place salmon steaks on top. Cover and simmer for 15 minutes or until fish flakes easily with a fork.

Recipe 10: Salmon Steaks with Dill Sauce

Ingredients:
1-1/2 cups water 
1 medium onion, sliced 
1 tablespoon lemon juice 
1 teaspoon chicken bouillon granules 
1 teaspoon salt 
4 salmon steaks (1 inch thick)  
1 tablespoon finely chopped onion 
2 tablespoons butter 
2 tablespoons all-purpose flour 
1 teaspoon dill weed 
1/2 teaspoon salt 
1/8 teaspoon pepper 
1-1/2 cups milk

Directions:
In a large skillet, combine the first five ingredients; bring to a boil. Add salmon. Reduce heat; cover and simmer for 15-20 minutes or until fish flakes easily with a fork. Meanwhile, in a saucepan, saute onion in butter until tender. Stir in flour, dill, salt and pepper until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the salmon.
