Recipe 1: Simple Baked Salmon with Lemon and Thyme

Ingredients:
32 oz piece of salmon
1 lemon, sliced thin
1 tbsp capers
Salt and freshly ground pepper
1 tbsp fresh thyme
Olive oil, for drizzling

Instructions:
Line a rimmed baking sheet with parchment paper and place salmon, skin side down, on the prepared baking sheet. Generously season salmon with salt and pepper. Arrange capers on the salmon, and top with sliced lemon and thyme.
Place baking sheet in a cold oven, then turn heat to 400 degrees F. Bake for 25 minutes. Serve immediately.

Recipe 2: Salmon baked in a foil parcel with green beans and pesto

Ingredients:
2 handfuls of green beans
sea salt and freshly ground black pepper
2 lemons
2 x 150g chunky salmon fillets, skin on, scaled and bones removed
2 heaped tablespoons green pesto
olive oil

Instructions:
Preheat your oven to 200°C/400°F/gas 6 
Trim your beans by cutting off the stalk ends but leave the wispy tips on 
Put the beans into a large pan of boiling water with a pinch of salt and cook for 3 to 4 minutes
Halve one of the lemons 
Get yourself just under a metre of kitchen foil and fold it in half to give you two layers 
Drain and put half of the green beans in the middle of the foil
Lay a salmon fillet, skin-side down, across the beans and spoon over a good tablespoon of green pesto (see Classic basil pesto) 
Drizzle with olive oil, squeeze over the juice from one of the lemon halves and season with salt and pepper
Pull the foil edges together and scrunch them up to seal the parcel 
Repeat these steps to make your second salmon fillet parcel and place both foil parcels on a baking tray
Put the baking tray into your hot oven and cook for 15 to 20 minutes, depending on the size of your fillets
Remove the tray from the oven and let it stand for a minute before carefully unwrapping and checking that the salmon is cooked through 
Either serve the foil parcels on plates as they are, or carefully unwrap them before serving 
Cut the remaining lemon in half and serve on the side for squeezing over 
Nice served with new potatoes, rice (see Fluffy rice) or chunks of crusty bread

Recipe 3: Oven-Baked Salmon With Herbs

INGREDIENTS:
1 salmon filet - about a pound
2 - 4 T fresh herbs, chopped (thyme or dill is nice, but anything you like is probably good)
1/2 teaspoon pepper
1/2 teasoon salt (a bit more if kosher, or if fish is skinned)
1 teaspoon oil, if that - you just need a very thin film

PREPARATION:
1. Heat the oven to 200 F. (not a typo)
2. Chop up the herb, and mix it with the salt and pepper. I happen to have lemon thyme in my garden, and it is my favorite for fish, but regular thyme or any herb you like works fine -- even parsley. If you want to use more, that's fine, and sometimes I mix in a a tablespoon or so of sesame seeds.
3. Smear the oil on an oven-proof serving platter, and put the fish on top. If the filet is skinned, put some salt and pepper on both sides, otherwise just put the fish skin side down and season the top. I usually run my oily hand from the platter-smearing over the fish so the seasoning will stick a bit better.
4. Bake for about 40 to 45 minutes, until salmon flakes. You won't believe how good it is. I usually serve it with a sort of homemade tartar sauce mixing mayonnaise, lemon zest and juice, some of the same herb I used on the fish, capers, and a very small amount of hot sauce.

Recipe 4: Salmon with Hoisin Glaze

Ingredients:
2 tablespoons hoisin sauce
2 teaspoons low-sodium soy sauce
1/2 teaspoon dark sesame oil
4 (6-ounce) skinless wild salmon fillets 
Cooking spray
1 teaspoon sesame seeds
Lemon rind strips (optional)

Preparation:
1. Preheat oven to 400°.
2. Combine first 3 ingredients in a shallow dish. Add fish to dish, turning to coat. Marinate at room temperature 8 minutes, turning occasionally.
3. Remove fish from marinade; discard marinade. Place fish on a baking sheet coated with cooking spray. Sprinkle fish evenly with sesame seeds. Bake at 400° for 8 minutes or until fish flakes easily when tested with a fork. Garnish with rind, if desired.

Recipe 5: Stuffed Baked Salmon

Ingredients:
2 tbsp olive oil
2 garlic cloves, crushed
100g mushrooms, sliced
1/2 red pepper, sliced
100g Swiss chard
1 tbsp fresh thyme, chopped
Salt and pepper
2 x 250g fresh salmon fillets, skin off
140g sugar snaps
Juice and rind of 1/2 lemon

Method:
1. Preheat the oven at 200°C and line a baking tray with greased foil.
2. Heat the oil and sauté the garlic for a minute.
3. Add the mushrooms and pepper and cook until slightly soft.
4. Add the Swiss chard, thyme and lemon zest and cook until wilted. Season and leave to cool slightly.
5. Make a lengthwise slit on the fish fillets (keeping both ends in tact) to make room for the stuffing.
6. Stuff half of the stuffing into each fillet and place in a baking sheet lined with foil.
7. Bake in oven for 10 minutes.
8. Add the sugar snaps and bake for a further 2 minutes of cooking until the fish flakes easily when tested with a fork. The fish should still be pink inside.
9. Transfer to serving platter and finish with a squeeze of lemon juice.

Recipe 6: Baked Salmon Recipe with Lemon

Ingredients:
1 pound salmon fillet
½ cup dry white wine (substitute: vegetable/chicken stock or water)
1 lemon, cut into slices
2 to 3 sprigs of fresh dill
1 tablespoon of fresh chopped dill
?1 tablespoon olive oil
Salt and freshly ground black pepper

Directions:
Heat oven to oven to 350 degrees F (177 degrees C).
Place lemon slices and dill on the bottom of a large baking dish.
Rub both sides of salmon with olive oil and season with salt and pepper. Arrange on top of lemon slices and dill. Scatter chopped dill on to the top of the salmon.
Add wine (or stock/water) and cover with aluminum foil.
Bake for 20 to 25 minutes. (Cooking time may vary depending on the thickness of your salmon, so you can tell the fish is done when it is easily flaked with a fork).

Recipe 7: Baked Salmon with Dill Mustard Sauce

Ingredients:
Dill Mustard Sauce (see recipe below)
1 (2- to 3-pound) salmon fillet (1 1/2-inches thick)
3 tablespoons extra-virgin olive oil
Coarse salt and freshly-ground black pepper

Preparation:
Prepare Dill Mustard Sauce; refrigerate until ready to serve.
Preheat oven to 350 degrees F. Line the bottom of an ungreased baking pan with aluminum foil.
Wash salmon fillet and pat dry. Rub with olive oil, sprinkle with coarse salt and pepper, and place skin-side down onto prepared baking pan.
Bake salmon, uncovered, 12 to 15 minutes or until a meat thermometer registers an internal temperature of 140 to 145 degrees F (salmon will be slightly opaque in thickest part).
