Recipe 1: Easy Baked Salmon 

Ingredients:
1 salmon fillet (2 pounds) 
2 tablespoons butter, softened 
1/4 cup white wine or chicken broth 
2 tablespoons lemon juice 
1/2 teaspoon pepper 
1/2 teaspoon dried tarragon

Directions:
1. Pat salmon dry. Place in a greased 13-in. x 9-in. baking dish. brush with butter. Combine remaining ingredients; pour over salmon. 
2. Bake, uncovered, at 425° for 20-25 minutes or until fish flakes easily with a fork.

Recipe 2: Pistachio Baked Salmon

Ingredients:
6 salmon fillets (6 ounces each) 
1 cup pistachios, chopped 
1/2 cup packed brown sugar 
3 tablespoons lemon juice 
1 teaspoon dill weed 
1 teaspoon pepper

Directions:
1. Preheat oven to 425°. Place salmon in a greased 13x9-in. baking dish. Combine remaining ingredients; spoon over salmon. 
2. Bake, uncovered, 12-15 minutes or until fish flakes easily with a fork. 

Recipe 3: Baked Salmon with Herbs

Ingredients:
2-1/2 cups soft bread crumbs (about 5 slices) 
4 garlic cloves, minced 
2 tablespoons grated Parmesan cheese 
2 teaspoons dried parsley flakes 
1 teaspoon dried thyme 
1 teaspoon dried rosemary, crushed 
1/2 teaspoon salt 
1/4 teaspoon pepper 
2 tablespoons butter, melted 
1 salmon fillets (3 pounds)

Recipe 4: Baked Salmon Steaks

Ingredients:
2 tablespoons water 
2 tablespoons olive oil 
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano 
2 teaspoons sugar 
2 teaspoons lime juice 
2 teaspoons minced chipotle pepper in adobo sauce 
2 garlic cloves, minced 
1 teaspoon salt 
4 salmon steaks (8 ounces each) 
Lime wedges

Directions
1. In a small bowl, combine the first eight ingredients. Place salmon in a greased 15-in. x 10-in. x 1-in. baking pan. Spoon chipotle mixture over fish. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork. Serve with lime wedges.

Recipe 5: Maple Baked Salmon

Ingredients:
6 salmon fillets (6 ounces each) 
1/4 cup packed brown sugar 
1/4 cup maple syrup 
3 tablespoons reduced-sodium soy sauce 
1 tablespoon Dijon mustard 
1/4 teaspoon pepper 
4 teaspoons sliced almonds, toasted, optional

Directions:
1. Preheat oven to 425°. Place salmon fillets in a greased 13x9-in. baking dish. In a small bowl, combine brown sugar, syrup, soy sauce, mustard and pepper. Pour over salmon. 
2. Cover and bake 10 minutes. Uncover and bake 8-10 minutes longer or until fish flakes easily with fork. Sprinkle with almonds if desired.

Recipe 6: Baked Salmon with Crumb Topping

Ingredients:
1 cup soft whole wheat bread crumbs 
1/3 cup sliced almonds, coarsely chopped 
1 tablespoon finely chopped green onion 
1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme 
1/2 teaspoon salt 
1/8 teaspoon pepper 
2 tablespoons butter, melted 
1 salmon fillet (2 pounds)

Directions:
In a bowl, combine the bread crumbs, almonds, onion, thyme, salt and pepper; mix well. Add butter and toss lightly; set aside. Pat salmon dry. Place skin side down in a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Spritz salmon with cooking spray; cover with crumb mixture. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork. 

Recipe 7: Garlic-Butter Baked Salmon

Ingredients:
2 whole garlic bulbs 
4 teaspoons olive oil, divided 
3 tablespoons butter 
6 salmon fillets (6 ounces each) 
1/4 teaspoon salt 
1/4 teaspoon pepper 
2 to 3 tablespoons lemon juice 
1 teaspoon minced fresh parsley 
1/4 teaspoon minced fresh rosemary

Directions:
1. Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulbs. Brush with 1 teaspoon oil. Wrap each bulb in heavy-duty foil. 
2. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. 
3. Squeeze softened garlic into a food processor; add butter and remaining oil. Cover and process until blended; set aside. 
4. Place salmon in a greased 15-in. x 10-in. x 1-in. baking pan. Sprinkle with salt and pepper; drizzle with lemon juice. Spoon 1 tablespoon garlic butter over each fillet. 
5. Bake, uncovered, at 425° for 8-10 minutes or until fish flakes easily with a fork. Sprinkle with parsley and rosemary.

Recipe 8: Baked Salmon Cakes

Ingredients
1 can (14-3/4 ounces) salmon, drained, bones and skin removed 
1-1/2 cups soft whole wheat bread crumbs 
1/2 cup finely chopped sweet red pepper 
1/2 cup egg substitute 
3 green onions, thinly sliced 
1/4 cup finely chopped celery 
1/4 cup minced fresh cilantro 
3 tablespoons fat-free mayonnaise 
1 tablespoon lemon juice 
1 garlic clove, minced 
1/8 to 1/4 teaspoon hot pepper sauce

Directions:
In a large bowl, combine the first 11 ingredients. Place 1/3 cup salmon mixture into eight muffin cups coated with cooking spray. Bake at 425° for 10-15 minutes or until a thermometer reads 160°.

Recipe 9: Snowcapped Salmon

Ingredients:
1 tablespoon all-purpose flour 
4 salmon fillets (6 ounces each) 
2 egg whites 
1 cup mayonnaise 
1 teaspoon ground mustard 
1/4 cup grated Parmesan cheese

Directions:
1. Sprinkle flour over salmon fillets. Place in a greased 11-in. x 7-in. baking dish. In a small bowl, beat egg whites until stiff peaks form. In another bowl, combine the mayonnaise and mustard; fold in egg whites. Spoon over salmon. Sprinkle with cheese. 
2. Bake, uncovered, at 350° for 25-30 minutes or until fish flakes easily with a fork.

Recipe 10: Baked Spiced Salmon

Ingredients:
4 salmon fillets (6 ounces each) 
3 tablespoons lime juice, divided 
1/2 teaspoon salt 
1/2 teaspoon ground ginger 
1/2 teaspoon ground coriander 
1/4 teaspoon ground cumin 
1/8 teaspoon ground cinnamon 
1/8 teaspoon cayenne pepper 
3/4 cup (6 ounces) plain yogurt 
3 green onions, sliced 
2 tablespoons minced fresh cilantro

Directions:
1. Place the salmon in a greased 13-in. x 9-in. baking dish. Drizzle with 2 tablespoons lime juice. Combine the salt, ginger, coriander, cumin, cinnamon and cayenne; sprinkle over salmon. 
2. Bake, uncovered, at 425° for 18-22 minutes or until fish flakes easily with a fork. Meanwhile, in a small bowl, combine the yogurt, onions, cilantro and remaining lime juice. Serve with salmon.

Ingredients:
1 salmon fillet (1 pound) 
1 tablespoon butter, melted 
1 tablespoon prepared horseradish, drained 
2 teaspoons lemon juice 
1/4 teaspoon garlic powder 
1/8 teaspoon pepper

Directions
1. Place salmon skin side down in an 11-in. x 7-in. baking dish coated with cooking spray. In a small bowl, combine the butter, horseradish, lemon juice, garlic powder and pepper; spread over salmon. 
2. Bake, uncovered, at 375° for 20-25 minutes or until fish flakes easily with a fork.

Recipe 12: Baked Strawberry Salmon

Ingredients:
3/4 cup soy sauce 
2 tablespoons lemon juice 
1 tablespoon Dijon mustard 
1/4 teaspoon pepper 
4 salmon fillets (6 ounces each), skin removed 
2/3 cup strawberry preserves

Directions:
1. In a large resealable plastic bag, combine the soy sauce, lemon juice, mustard and pepper. Add salmon; seal bag and turn to coat. Refrigerate for 30 minutes. 
2. Drain and discard marinade. Place salmon in a greased 13-in. x 9-in. baking dish; spoon preserves over fillets. Bake, uncovered, at 375° for 15-20 minutes or until salmon flakes easily with a fork.
