Recipe 1: Salmon Loaf
Ingredients:
1 (14.75 ounce) can salmon, undrained
1/2 cup crushed saltine crackers
1/2 cup milk
1 egg, beaten
salt and pepper to taste
2 tablespoons melted butter
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a mixing bowl, combine the salmon, cracker crumbs, milk, egg, salt, pepper, and melted butter. Mix thoroughly.
3. Press the salmon mixture into a lightly greased 9x5 inch loaf pan.
4. Bake in a preheated oven for 45 minutes or until done.
Recipe 2: Salmon Loaf
Ingredients:
1 can (14-3/4 ounces) salmon, drained, bones and skin removed
1 small onion, finely chopped
1/2 cup soft bread crumbs
1/4 cup butter, melted
3 eggs, separated
2 teaspoons lemon juice
1 teaspoon minced fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper
OLIVE CREAM SAUCE:
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 cups milk
1/4 cup chopped pimiento-stuffed olives
Directions:
1. In a large bowl, combine the salmon, onion, bread crumbs and butter. Stir in the egg yolks, lemon juice, parsley, salt and pepper.
2. In a small bowl, beat the egg whites on high speed until stiff peaks form. Fold into salmon mixture.
3. Transfer to a greased 8-in. x 4-in. loaf pan. Place in a larger baking pan. Add 1 in. of hot water to larger pan. Bake at 350° for 40-45 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before slicing.
4. Meanwhile, in a small saucepan, melt the butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in olives. Serve with salmon loaf.
Recipe 3: Salmon Loaf
Ingredients:
2 (1 lb) cans red salmon
6 slices white bread, fresh, shredded
2 eggs, well-beaten
1 cup milk
2 tablespoons parsley, snipped
1/4 cup onion, minced
1 teaspoon salt
1 tablespoon Worcestershire sauce
1/4 teaspoon poultry seasoning
1/4 cup butter, melted
1/4 cup lemon juice
Directions:
1. Preheat oven to 350 degrees F (177 C).
2. Flake salmon in large bowl; remove bones Combine remaining ingredients with salmon.
3. Turn the salmon mixture into a greased 1 1/2-qt. (1.5-liter) casserole dish.
4. Bake 50 to 60 minutes or until firm in the center. Serve hot.
Recipe 4: Baked Salmon Loaf
Ingredients:
1 (1 lb) can salmon, flaked (I use one large can and one small can)
2 eggs, slightly beaten
1/2 cup milk
1/2 cup buttered bread crumb
1 teaspoon lemon juice
1/2 teaspoon salt
1 dash pepper
1 small chopped onion
1 tablespoon chopped parsley or 1 tablespoon green pepper
1 tablespoon melted butter
1/2 teaspoon sage (optional)
Ritz cracker, crushed
butter, melted
Directions:
1. Combine ingredients in order given.
2. Pack firmly in buttered loaf pan and bake in a 350 degree oven for 30-40 minutes.
3. For topping: Mix enough butter in with the Ritz crackers to moisten.
4. Sprinkle generously on top of casserole.
Recipe 5: Salmon Loaf With Cucumber Sauce
Ingredients:
1 (16 ounce) can canned salmon, thoroughly drained and flaked (reserve the brine)
1/4 cup butter, at room temperature
1/2 teaspoon salt
3 tablespoons lemon juice
2 tablespoons onions, finely grated
2 garlic cloves, finely grated
1 teaspoon dried parsley
1 teaspoon fresh dill, finely chopped
1 cup soft breadcrumbs
2/3 cup milk
2 eggs, beaten
1/2 tablespoon parmesan cheese
1/4 cup butter
1/4 cup flour
2 cups milk
1 1/2 cups grated cucumbers
1 teaspoon paprika (mild or hot, depending on your preference)
Directions:
1. Preheat the oven at 325؛F.
2. Combine the salmon with the butter.
3. Add salt (to taste), lemon juice, grated onion, grated garlic, parsley and dill.
4. Soak the breadcrumbs in milk.
5. Add the beaten eggs.
6. Add the Parmesan.
7. Stir the breadcrumb mixture into the salmon mixture.
8. If the mixture seems too dry at this point, add a little of the reserved brine (about a teaspoon at a time) or if you have more lemon juice available, a little more lemon juice (a teaspoon at a time).
9. Spoon the mixture into a lightly greased 9x5x3-inch loaf pan.
10. Bake at 325°F for 45 minutes, or until cooked.
11. grate the cucumber.
12. Melt the butter in a pan over a medium-low heat.
13. Blend in the flour.
14. Gradually add the milk, stirring constantly, until the sauce is thickened and bubbly.
15. Add the grated cucumber and paprika.
16. Stir to blend.
17. Serve with the salmon loaf and your favourite salad or vegetable side dishes.
Recipe 6: Salmon Loaf
Ingredients:
1 can (16 ounces) salmon, drained
2 cups soft bread crumbs
2 eggs, lightly beaten
1/2 cup milk or evaporated milk
2 tablespoons finely chopped onion
1 tablespoon dried parsley flakes
1 teaspoon salt
dash pepper
Preparation:
Mash salmon; combine with remaining ingredients and put in a buttered loaf pan about 9 x 5 x 1-inch. Bake at 350° for 45 minutes, or until loaf is firm.
