Recipe 1: Salmon Steaks with Soy-Maple Glaze

Ingredients:
1/4 cup soy sauce 
3 tablespoons pure maple syrup 
3 tablespoons Asian sesame oil 
Four 8-ounce wild salmon steaks, cut 1 inch thick 
One 2-inch piece of fresh ginger—peeled, thinly sliced and smashed 
2 garlic cloves, smashed 
2 scallions, thinly sliced

Direction:
1. In a large, shallow dish, whisk the soy sauce with the maple syrup and sesame oil. Add the salmon steaks and turn to coat. Press the ginger and garlic onto both sides of the steaks. Cover and refrigerate for 2 hours, turning the salmon a few times. 
2. Light a charcoal grill. Remove the salmon from the marinade. Pour the marinade into a small saucepan and boil over high heat until syrupy, about 3 minutes. Strain the glaze into a small bowl. 
3. Oil the grate and grill the salmon over moderately high heat for 6 minutes, rotating the steaks slightly after 2 minutes to make crosshatches, if desired. Turn the steaks and grill for 6 minutes longer. Transfer to plates and spoon the glaze on top. Sprinkle with the scallions and serve.

Recipe 2: Salmon Steaks with Dill Sauce 

Ingredients:
1-1/2 cups water 
1 medium onion, sliced 
1 tablespoon lemon juice 
1 teaspoon chicken bouillon granules 
1 teaspoon salt 
4 salmon steaks (1 inch thick)
1 tablespoon finely chopped onion 
2 tablespoons butter 
2 tablespoons all-purpose flour 
1 teaspoon dill weed 
1/2 teaspoon salt 
1/8 teaspoon pepper 
1-1/2 cups milk

Directions:
In a large skillet, combine the first five ingredients; bring to a boil. Add salmon. Reduce heat; cover and simmer for 15-20 minutes or until fish flakes easily with a fork. Meanwhile, in a saucepan, saute onion in butter until tender. Stir in flour, dill, salt and pepper until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the salmon.

Recipe 3: Herbed Salmon Steaks

Ingredients:
1/4 cup butter, melted 
2/3 cup crushed saltines (about 20 crackers) 
1/4 cup grated Parmesan cheese 
1/2 teaspoon salt 
1/2 teaspoon dried basil 
1/2 teaspoon dried oregano 
1/4 teaspoon garlic powder 
4 salmon steaks (6 to 8 ounces each)

Directions
1. Place butter in a shallow dish. In another shallow dish, combine the cracker crumbs, Parmesan cheese, salt, basil, oregano and garlic powder. Dip salmon into butter, then coat both sides with crumb mixture. 
2. Place in a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 350° for 30-35 minutes or until fish flakes easily with a fork.

Recipe 4: Confetti Salmon Steaks

Ingredients:
2 salmon steaks (6 ounces each) 
1/2 teaspoon Worcestershire sauce 
1/2 teaspoon lemon juice 
1/2 teaspoon Cajun or Creole seasoning 
1/4 teaspoon salt, optional 
1/2 cup diced green pepper 
1/2 cup diced sweet red pepper

Directions
1. Place the salmon in an ungreased 8-in. square microwave-safe dish. Rub with Worcestershire sauce and lemon juice; sprinkle with Cajun seasoning and salt if desired. Sprinkle peppers on top. 
2. Cover and microwave on high for 5-1/2 to 6 minutes, turning once, or until fish flakes easily with a fork. Let stand, covered, for 2 minutes

Recipe 5: Tarragon Salmon Steaks

Ingredients:
2 salmon steaks (about 1 inch thick) 
2 tablespoons butter, melted 
2 teaspoons lemon juice 
1 tablespoon minced fresh tarragon 
1 tablespoon minced fresh parsley 
Salt and pepper to taste

Recipe 6: Seasoned Salmon Steaks

Ingredients:
6 salmon steaks (1 inch thick and 6 ounces each) 
1/2 cup butter, melted 
2 teaspoons seasoned salt 
2 teaspoons Italian seasoning 
2 teaspoons lemon juice 
1/2 teaspoon garlic powder 
1/2 teaspoon grated lemon peel 
Dash cayenne pepper

Directions:
1. Place salmon on a greased broiler rack. Broil 4-6 in. from the heat for 8-10 minutes. 
2. Meanwhile, combine the remaining ingredients. Brush some over some over salmon. Turn and broil 10 minutes longer or until fish flakes easily with a fork. Baste with remaining butter mixture.

Recipe 7: Grilled Salmon Steaks

Ingredients:
2 tablespoons white wine vinegar 
2 tablespoons sugar 
1 tablespoon dill weed 
3/4 teaspoon salt 
1/8 to 1/4 teaspoon pepper, optional 
4 salmon steaks (1-inch thick and 6 ounces each)
3 tablespoons mayonnaise 
3 tablespoons Dijon mustard 
3 tablespoons dill weed 
1 tablespoon sugar 
4 teaspoons white wine vinegar 
1/4 teaspoon pepper, optional

Directions:
1. In a large resealable plastic bag, combine the first five ingredients. Add salmon; seal bag and turn to coat. Refrigerate for 1 hour, turning occasionally. 
2. In a small bowl, combine the sauce ingredients; cover and refrigerate until chilled. 
3. Discard marinade. Grill salmon, covered, over medium heat for 6-7 minutes on each side or until fish flakes easily with a fork. Serve with mustard dill sauce.

Recipe 8: Creamy Dill Salmon Steaks

Ingredients:
1/2 cup chopped green onions 
1 tablespoon butter 
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted 
1/2 cup half-and-half cream 
2 tablespoons white wine or chicken broth 
2 tablespoons chopped fresh dill or 2 teaspoons dill weed 
4 salmon steaks (1 inch thick)

Directions:
In a large skillet, saute the onions in butter. Add the soup, cream, wine or broth and dill. Place salmon steaks on top. Cover and simmer for 15 minutes or until fish flakes easily with a fork. 

Recipe 9: Soy-Glazed Salmon Steaks

Ingredients: 
1 tablespoon soy sauce 
1 tablespoon honey 
1 teaspoon grated fresh ginger 
4 salmon steaks (6 ounces each)

Directions:
1. Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil; set aside. In a small bowl, whisk together soy sauce, honey, and ginger.
2. Place salmon on prepared baking sheet; brush with soy mixture. Broil until browned on top and opaque throughout, 5 to 6 minutes.

Recipe 10: Salmon Steaks With Hoisin Glaze

Ingredients:
1 tablespoon fresh orange juice 
2 tablespoons hoisin sauce 
2 teaspoons honey 
4 salmon steaks (each 8 to 10 ounces and 1 inch thick) 
Coarse salt and ground pepper

Directions:
1. Heat broiler. In a small bowl, whisk together orange juice, hoisin sauce, and honey.
2. Rinse salmon steaks, and pat dry. Season both sides with salt and pepper. Place steaks on a rimmed baking sheet. Brush generously with glaze.
3. Broil salmon about 4 inches from the heat source, basting once, until opaque in center, 10 to 13 minutes.

Recipe 11: Grilled Salmon Steaks with Lime Butter

Ingredients:
1/2 cup (1 stick) butter, melted
1/4 cup lime juice
1 tablespoon pepper
4 9-ounce salmon steaks
Lime wedges

Preparation:
1. Combine first 3 ingredients. Place salmon in glass baking dish. Pour lime butter over. Let salmon marinate while preparing barbecue or preheating broiler. 
2. Prepare barbecue (medium-high heat) or preheat broiler. Cook salmon until just opaque, brushing with lime butter marinade occasionally, about 4 minutes per side. Transfer to plates. Brush with any remaining lime butter. Serve immediately with lime wedges.
