Recipe 1:Rachael Ray's Mustard-Crusted Salmon
Ingredients:

1 1/2 lbs center-cut salmon fillets
1 1/2 tablespoons extra virgin olive oil
3 tablespoons chopped fresh dill or 1 1/2 tablespoons dried dill
1 1/2 tablespoons herbes de provence
1/4 cup Dijon mustard
Directions:
1 Preheat the oven to 375. Rub the salmon with the olive oil. Place on foil-or parchment paper-lined baking sheet. Cover with the dill and herbes de Provence. Spread the mustard on top ot cover completely.
2 Bake the salmon until opaque, about 15 minutes.
Recipe 2:Salmon Cakes - Rachael Ray
Ingredients:

2 (14 ounce) cans salmon, drained
2 egg whites, beaten
1/3 cup Italian seasoned breadcrumbs
1 tablespoon seasoning, all-purpose (recommended ( Old Bay)
1 teaspoon hot sauce (recommended ( Tabasco)
2 tablespoons flat leaf parsley, chopped
3 -4 tablespoons roasted red peppers (1/2 pepper from a jar, drained)
salt and pepper
1 tablespoon vegetable oil
Directions:
1 Heat a medium skillet over medium high heat.
2 Combine salmon, egg white, bread crumbs, crab boil seasoning, hot sauce, parsley, roasted red pepper and salt and pepper.
3 Form 4 patties, 1-inch thick.
4 Add vegetable oil to hot pan, Rotate pan one complete turn to coat bottom of pan with the oil.
5 Add patties and cook about 3 minutes on each side until golden brown and cooked through.
Recipe 3:Everything Salmon Burgers(Rachael Ray)
Ingredients:
Servings:4
1 1/2 lbs skinless salmon fillet, cut into large chunks
1 tablespoon grill seasoning (recommended-McCormick's Montreal Steak seasoning)
1 tablespoon poppy seed
1 tablespoon sesame seeds
2 tablespoons dried onion flakes
1/4 cup fresh dill
extra virgin olive oil, for drizzling
1/2 cup cream cheese, softened
3 scallions, chopped
1/2 cup sour cream
1 tablespoon lemon juice
4 crusty kaiser rolls (or other rolls of choice)
green leaf lettuce
sliced beefsteak tomato
sliced red onion
Directions:
1 Place the salmon in a food processor and pulse to coarse grind the fish.Transfer the fish to a mixing bowl and season with the grill seasoning, poppy and sesame seeds, onion flakes, and dill. Use your hands to mix, then divide into 4 equal portions and form each portion into a patty.
2 Heat a about a tablespoon of olive oil in a large skillet over medium high heat.
3 Cook the burgers for 3 minutes on each side for a pink center, 4-5 minutes on each side for fully cooked.
4 While the burgers cook, combine the cream cheese with the scallions. Fold in the sour cream and lemon juice. Split and lightly toast the rolls.
5 Serve the burgers on the toasted buns topped with lettuce, tomato, red onion, and some of the cream cheese sauce.

Recipe 4:Oven Poached Salmon a La Paige (Rachael Ray)
Ingredients:
Servings:4
1 tablespoon butter, cold
4 (6 -8 ounce) salmon fillets
salt and pepper
2 -3 sprigs fresh dill
3 tablespoons fresh dill, chopped
2 cups chicken broth, can use water
2 teaspoons sugar
1 teaspoon salt
1/4 cup white vinegar, can use white wine vinegar
1 small vidalia onion, chopped
1/2 seedless cucumber, chopped
2 radishes, chopped
Directions:
1 Preheat oven to 400°F.
2 Rub the bottom of a shallow baking dish with cold butter.
3 Arrange salmon in dish.
4 Season the fish with salt and pepper.
5 Add broth and a few sprigs of dill to the pan.
6 Roast the fish 12 to 15 minutes.
7 Combine sugar, salt and vinegar in the bottom of a medium bowl.
8 Add chopped onions, chopped cucumber and radishes.
9 Sprinkle in 3 tablespoons chopped dill and toss the mixture to coat in vinegar, sugar and salt.
10 Remove fish from the oven.
11 Spoon pan juices over fish and carefully transfer to individual plates or platter.
12 Top fish with relish and serve.
