Recipe 1: Baked Lemon Garlic Herb Crusted Salmon 

Ingredients:
3 oz butter 
1 tsp coarse salt 
1 lemon zest
1 tbsp fresh parsley chopped
1 tsp fresh dill chopped
1 garlic clove minced 
dash white pepper
4 salmon fillets

Instructions: 
1. Place all ingredients except for salmon in a small bowl and melt in the microwave for 30-45 seconds.
2. Stir until combined.
3. Place the salmon fillets on a parchment lined baking sheet.
4. Using a pastry brush, coat the salmon with the lemon herb butter, evenly spreading it over the tops of each fillet.
5. Bake in an oven preheated to 400 degrees on the top or second to top rack for 10-12 minutes, or until salmon is cooked through and flakes easily with a fork.

Recipe 2: Simple Grilled Cajun Salmon

Ingredients:
1 large fillet of wild or organic salmon, skin on (1/2 lb or 220g)
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/4 teaspoon paprika
1/8 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon cayenne pepper
1/8 teaspoon dried oregano
1/8 teaspoon dried thyme
1/8 teaspoon red pepper flakes (optional)
(or 1 tsp of Cajun seasoning!!!)
1 tsp olive oil
1/2 a medium ripe avocado
4-5 baby plum tomatoes sliced in half
1/2 tbsp coriander finely chopped
1 small spring onion finely chopped
1 tsp lemon or lime juice juice
Pinch of chili flakes or fresh finely chopped chili (optional)
Salt and Black Pepper to taste

Instructions:
1. Mix together seasoning.
2. Rub olive oil over the flesh of the fish, rub with spices and set aside for an hour in the fridge or overnight.
3. Preheat grill (indoor or outdoor!).
4. Cook fish skin side up for 3 minutes, flip and cook for 3-4 minutes or until the fish easily flakes.

Recipe 3: Pistachio Salmon with Cranberry Sauce and Celriac Mash

Ingredients:
2-3 ounce salmon filets
1 teaspoon honey
1 teaspoon dijon
¼ cup pistachios
¼ teaspoon olive oil
sea salt and black pepper, to taste
½ cup cranberries
½ cup water
3 tablespoons honey (this will make a tart sauce- more if you like it sweeter)
1 large celriac (celery root)
½ tablespoon butter
¼ cup plain unsweetened almond milk (or milk or choice)
sea salt and black pepper, to taste

Instructions:
1. Preheat oven to 425 degrees f.
2. Add pistachios to a blender, and blend until ground into a fine flour. The photos are taken with a coarser grind, which will result in a less crunchy topping. A finer grind will bake up crisper.
3. Mix pistachio flour with sea salt and pepper, to taste, and then mix in ½ teaspoon olive oil.
4. In a small dish, mix the honey and dijon.
5. In a baking dish, brush the honey-dijon mixture on the salmon. Dip the top of each salmon fillet in the pistachio mixture and coat well.
6. Bake for 20-25 minutes, until salmon is cooked through.
7. Increase oven temperature to low broil, and place salmon near the broiler. Continue to cook for another 3-5 minutes, watching carefully to keep nuts from burning.
8. Add fresh or frozen cranberries, water, and honey to a sauce pan. Bring to a boil over medium high heat, and boil for 3-4 minutes, until cranberries have popped. Remove from heat and allow to cool.
9. Peel and chop the celriac into large chunks.
10. Add the celriac to a pot with boiling water, and boil for 12-15 minutes, until the chunks are soft all the way through. It will not fall apart as easily as potatoes.
11. Drain, and add the cooked celriac to a food processor bowl. Add butter, milk, and salt and pepper. Process for 3-4 minutes. It will take longer for the celriac to form a mash than potatoes, but will eventually smooth out. Celriac doesn't get as smooth as potatoes, but will be thick and creamy.

Recipe 4: Crab-Stuffed Salmon

Ingredients:
1/2 Lemon
16 oz Lump Crab Meat
3 cloves Garlic, minced
3 Tbsp Parsley, minced
1 tsp Salt
1 tsp Black Pepper
24 oz Wild Caught Salmon Filet, 4, 6 oz filets

Instructions:
1. Preheat oven to bake at 400°F.
2. In a small bowl, season crab meat with minced garlic, parsley, the juice of half of a lemon, salt, and pepper.
3. Slice salmon filet lengthwise down the center to create a space for stuffing.
4. Stuff salmon with seasoned crab meat, using about 1/4 cup of crab per salmon filet.
5. On a broiling pan, bake salmon for 18 minutes at 400°F.
6. Switch to broil, move rack to the top layer, and broil salmon at 500°F for an additional 5 minutes.
7. Garnish with fresh parsley and lemon.

Recipe 5: Easy Spicy Salmon Frittata

Ingredients:
1 Tbsp coconut oil
1 green pepper
1 onion
2 garlic cloves
1.5 cups cherry tomatoes
1 tsp cumin
1/2 tsp paprika
Sea salt and pepper to taste
6 soy free eggs beaten
1/2 cup wild canned salmon
2 Tbsp chopped cilantro
(always choose organic ingredients when possible)

Instructions:
1. Preheat the oven to 350.
2. Chopped the peppers and onions, then mince the garlic.
3. Melt the coconut oil in an oven safe skillet over medium heat.  (I love my skillet)
4. Cook the green pepper and onion for a few minutes then add garlic.
5. Add the cumin, paprika, salt and pepper.
6. Add in the halved tomatoes once the other veggies have cooked down a little.
7. Once the tomatoes have softened cooked a bit, sprinkle in the salmon distributing it evenly.
8. Pour in the eggs, making sure the contents are covered and assimilated.
9. Add a little more salt and pepper.
10. Transfer the pan to the oven and cook for 15 minutes or until the eggs are set.
11. Remove from the oven and top with fresh cilantro.
