Recipe 1: Grilled Salmon Steaks with Savory Blueberry Sauce

1/2 cup chicken stock
1/4 cup balsamic vinegar
1/4 cup orange juice
1 teaspoon honey
1 tablespoon cornstarch
1/4 cup chicken stock
1 cup fresh blueberries

2 tablespoons olive oil

Directions:
1. Pour 1/2 cup chicken stock, vinegar, orange juice, and honey into a saucepan. Bring to a boil over high heat, then reduce heat to medium. Dissolve cornstarch in 1/4 cup of chicken stock, and stir into the simmering sauce. Cook and stir until the sauce thickens and turns clear, 1 to 2 minutes. Recipe 2: Grilled Salmon Steaks Italian-Style
Ingredients:
2 salmon steaks
1 tablespoon dried Italian seasoning
1 teaspoon crumbled dried thyme
1 teaspoon crushed dried rosemary
salt and pepper to taste
1 tablespoon fresh lime juice
Directions:
1. Preheat an outdoor grill for medium heat and lightly oil grate.
2. Season one side of each steak with the Italian seasoning, thyme, rosemary, salt, and pepper.

1 1/2 teaspoons salt, or to taste
1 tablespoon chopped chives
2 teaspoons chopped fresh thyme
4 leaves fresh spinach
1/4 cup Parmesan cheese

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking dish with olive oil.
2. Pour 1/4 cup olive oil in a shallow bowl and dip salmon steaks in oil to coat. Stir garlic salt, onion salt, paprika, black pepper, and salt together in a small bowl; sprinkle seasoning onto salmon. Place salmon steaks into the prepared baking dish and sprinkle with chives, thyme, and spinach leaves. Sprinkle Parmesan cheese over the fish and seasonings.

Ingredients:
1/4 cup soy sauce
3 tablespoons pure maple syrup

2 garlic cloves, smashed
2 scallions, thinly sliced

1. In a large, shallow dish, whisk the soy sauce with the maple syrup and sesame oil. Add the salmon steaks and turn to coat. Press the ginger and garlic onto both sides of the steaks. Cover and refrigerate for 2 hours, turning the salmon a few times.
2. Light a charcoal grill. Remove the salmon from the marinade. Pour the marinade into a small saucepan and boil over high heat until syrupy, about 3 minutes. Strain the glaze into a small bowl.

1/2 teaspoon grated lemon peel
Dash cayenne pepper

1. Place salmon on a greased broiler rack. Broil 4-6 in. from the heat for 8-10 minutes.

1/2 cup diced green pepper
1/2 cup diced sweet red pepper
Directions:
1. Place the salmon in an ungreased 8-in. square microwave-safe dish. Rub with Worcestershire sauce and lemon juice; sprinkle with Cajun seasoning and salt if desired. Sprinkle peppers on top.
2. Cover and microwave on high for 5-1/2 to 6 minutes, turning once, or until fish flakes easily with a fork. Let stand, covered, for 2 minutes.

1 tablespoon dill weed

3 tablespoons Dijon mustard

1. In a large resealable plastic bag, combine the first five ingredients. Add salmon; seal bag and turn to coat. Refrigerate for 1 hour, turning occasionally.
2. In a small bowl, combine the sauce ingredients; cover and refrigerate until chilled.
3. Discard marinade. Grill salmon, covered, over medium heat for 6-7 minutes on each side or until fish flakes easily with a fork. Serve with mustard dill sauce.

Ingredients:
1/2 cup chopped green onions
1 tablespoon butter
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup half-and-half cream
2 tablespoons white wine or chicken broth
2 tablespoons chopped fresh dill or 2 teaspoons dill weed
4 salmon steaks (1 inch thick)
Directions:
In a large skillet, saute the onions in butter. Add the soup, cream, wine or broth and dill. Place salmon steaks on top. Cover and simmer for 15 minutes or until fish flakes easily with a fork.

1-1/2 cups water
1 medium onion, sliced
1 tablespoon lemon juice
1 teaspoon chicken bouillon granules
1 teaspoon salt
4 salmon steaks (1 inch thick)

2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon dill weed
1/2 teaspoon salt
1/8 teaspoon pepper
1-1/2 cups milk
Directions:
In a large skillet, combine the first five ingredients; bring to a boil. Add salmon. Reduce heat; cover and simmer for 15-20 minutes or until fish flakes easily with a fork. Meanwhile, in a saucepan, saute onion in butter until tender. Stir in flour, dill, salt and pepper until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with the salmon.
