Recipe 1: Double K Grilled Salmon

Ingredients
1/4 cup packed brown sugar
1/4 cup soy sauce
3 tablespoons unsweetened pineapple juice
3 tablespoons red wine vinegar
3 garlic cloves, minced
1 tablespoon lemon juice
1 teaspoon ground ginger
1/2 teaspoon pepper
1/2 teaspoon hot pepper sauce
1 salmon fillet (2 pounds)

Directions:
1. In a small bowl, combine the first nine ingredients. Pour 3/4 cup into a large resealable plastic bag; add salmon. Seal bag and turn to coat; refrigerate for 1 hour, turning occasionally. Set aside remaining marinade for basting.
2. Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on rack. Grill, covered, over medium heat or broil over medium heat for 5 minutes. Brush with reserved marinade. Grill or broil 15-20 minutes longer or until fish flakes easily with a fork.

Recipe 2: Salmon with Creamy Dill Sauce

Ingredients:
1 salmon fillet (about 2 pounds)
1 to 1-1/2 teaspoons lemon-pepper seasoning
1 teaspoon onion salt
1 small onion, sliced and separated into rings
6 lemon slices
1/4 cup butter, cubed
1/3 cup sour cream
1/3 cup mayonnaise
1 tablespoon finely chopped onion
1 teaspoon lemon juice
1 teaspoon prepared horseradish
3/4 teaspoon dill weed
1/4 teaspoon garlic salt
Pepper to taste

Directions
1. Line a 15-in. x 10-in. x 1-in. baking pan with heavy-duty foil; grease lightly. Place salmon skin side down on foil. Sprinkle with lemon-pepper and onion salt. Top with onion and lemon. Dot with butter. Fold foil around salmon; seal tightly,
2. Bake at 350° for 20 minutes. Open foil carefully, allowing steam to escape. Broil 4-6 in. from the heat for 8-12 minutes or until the fish flakes easily with a fork.
3. Combine the sauce ingredients until smooth. Serve with salmon.

Recipe 3: Brown Sugar-Glazed Salmon

Ingredients:
1 salmon fillet (1 pound)
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons brown sugar
1 tablespoon reduced-sodium soy sauce
4 teaspoons Dijon mustard
1 teaspoon rice vinegar

Directions:
1. Cut salmon widthwise into four pieces. Place in a foil-lined 15-in. x 10-in. x 1-in. baking pan; sprinkle with salt and pepper. Bake, uncovered, at 425° for 10 minutes.
2. Meanwhile, in a small saucepan, combine the brown sugar, soy sauce, mustard and vinegar. Bring to a boil. Brush evenly over salmon. Broil 6 in. from the heat for 1-2 minutes or until fish flakes easily with a fork.

Recipe 4: Lemon Grilled Salmon

Ingredients:
2 teaspoons snipped fresh dill or 3/4 teaspoon dill weed
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon salt, optional
1/4 teaspoon garlic powder
1 salmon fillet (1-1/2 pounds)
1/4 cup packed brown sugar
3 tablespoons chicken broth
3 tablespoons canola oil
3 tablespoons reduced-sodium soy sauce
3 tablespoons finely chopped green onions
1 small lemon, thinly sliced
2 onion slices, separated into rings

Directions
1. Sprinkle dill, lemon-pepper, salt if desired and garlic powder over salmon. In a large resealable plastic bag, combine the brown sugar, broth, oil, soy sauce and green onions; add salmon. Seal bag and turn to coat. Cover and refrigerate for 1 hour, turning once.
2. Drain and discard marinade. Grill salmon skin side down, over medium heat; arrange lemon and onion slices over the top. Cover and cook for 15-20 minutes or until fish flakes easily with a fork.

Recipe 5: Crusted Salmon

Ingredients:
4 salmon fillets (about 6 ounces each)
2 cups milk
1 cup finely chopped pecans
1/2 cup all-purpose flour
1/4 cup packed brown sugar
2 teaspoons seasoned salt
2 teaspoons pepper
3 tablespoons canola oil

Directions
1. Place salmon fillets in a large resealable plastic bag; add milk. Seal bag and turn to coat. Let stand for 10 minutes; drain.
2. Meanwhile, in a shallow bowl, combine the pecans, flour, brown sugar, seasoned salt and pepper. Coat fillets with pecan mixture, gently pressing into the fish.
3. In a large skillet, brown salmon over medium-high heat in oil. Transfer to a 15-in. x 10-in. x 1-in. baking pan coated with cooking spray. Bake at 400° for 8-10 minutes or until fish flakes easily with a fork.

Recipe 6: Walnut Ginger Salmon

Ingredients:
1 tablespoon brown sugar
1 tablespoon Dijon mustard
1 tablespoon soy sauce
1 teaspoon ground ginger
4 skinless salmon fillets (4 ounces each)
1/4 cup chopped walnuts

Directions
1. In a large resealable plastic bag, combine the brown sugar, mustard, soy sauce and ginger; add the salmon. Seal bag and turn to coat; refrigerate for 30 minutes, turning occasionally.
2. Drain and discard marinade. Place salmon on a foil-lined baking sheet coated with cooking spray. Broil 4-6 in. from the heat for 7-9 minutes or until fish flakes easily with a fork, sprinkling with walnuts during the last 2 minutes of cooking.

Recipe 7: Salmon with Vegetable Salsa

Ingredients
1-1/2 cups grape tomatoes, halved
1-1/2 cups chopped peeled cucumber
1 medium ripe avocado, peeled and cubed
1 small red onion, chopped
2 tablespoons minced fresh cilantro
1 jalapeno pepper, seeded and minced
2 tablespoons lime juice
1/2 teaspoon salt
4 salmon fillets (6 ounces each)
1 tablespoon lime juice
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 tablespoon butter

Directions
1. In a large bowl, combine the tomatoes, cucumber, avocado, onion, cilantro, jalapeno, lime juice and salt; set aside.
2. Drizzle salmon with lime juice. Sprinkle with salt and cayenne pepper. In a large skillet, cook fillets in butter for 3-4 minutes on each side or until fish flakes easily with a fork. Serve with salsa.

Recipe 8: Gingered Honey Salmon

Ingredients
1/3 cup orange juice
1/3 cup soy sauce
1/4 cup honey
1 green onion, chopped
1 teaspoon ground ginger
1 teaspoon garlic powder
1 salmon fillet (1-1/2 pounds and 3/4 inch thick)

Directions
1. In a small bowl, combine the first six ingredients. Set aside 1/3 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add the salmon and turn to coat. Seal bag and refrigerate for 30 minutes, turning once or twice.
2. Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill.
3. Grill, covered, over medium-hot heat or broil 4 in. from the grill for 5 minutes. Baste with reserved marinade. Grill or broil 10-15 minutes longer or until fish flakes easily with a fork, basting frequently.

Recipe 9: Saucy Skillet Salmon

Ingredients
1/2 cup all-purpose flour
1-1/4 teaspoons salt
1 teaspoon paprika
1/8 teaspoon pepper
2 pounds halibut, haddock or salmon fillets or steaks
1 medium onion, sliced
1/3 cup butter, cubed
1-1/2 cups (12 ounces) sour cream
1 teaspoon dried basil
1 tablespoon minced fresh parsley

Directions:
1. In a large resealable plastic bag, combine the flour, salt, paprika and pepper. Add fish and shake to coat (if using fillets, cut into serving-size pieces first).
2. In a large skillet, saute onion in butter until tender; remove and set aside. Add fish to the skillet, cook over medium heat for 3-5 minutes on each side or until the fish flakes easily with a fork. Remove fish to a serving plate and keep warm.
3. Add the sour cream, basil and onion to the skillet; heat through (do not boil). Serve with fish. Garnish with parsley.
