Recipe 1:Smoked Salmon Pasta Recipe

Ingredients:
8 ounces spaghetti (or other) pasta
Salt
1/4 cup pine nuts
2 Tbsp olive oil
1/3 cup chopped shallots (can substitute onions)
2 cloves garlic, minced
1/3 cup dry white wine (can substitute pasta cooking water with a Tbsp of lemon juice)
1/4 cup cream
1 Tbsp lemon juice
2 Tbsp lemon zest (divided into 1 Tbsp and 1 Tbsp)
2 Tbsp chopped fresh parsley or dill
4 ounces smoked salmon, cut into bite sized pieces
Fresh ground black pepper

Method:
1 Heat to boiling a large pot with at least 4 quarts of salted water in it. (2 Tbsp of salt for 4 quarts of water.) While the water is heating, brown the pine nuts. Put the pine nuts in a single layer in a large skillet. Heat on medium heat, stirring occasionally, until fragrant and lightly browned. Remove pine nuts from pan and set aside.
2 Once the water is boiling, add the pasta to the pot. Cook uncovered on high heat at a rolling boil. Put the timer on for 8-10 minutes, or whatever your pasta package says is appropriate for al dente (cooked but still a little firm).
3 While the pasta is cooking, prepare the sauce. In a large skillet heat olive oil on medium heat. Add the shallots and garlic, cook for 2 minutes, then add white wine, lemon juice, and 1 Tbsp of lemon zest. Increase the heat and let boil down by half. If you want a slightly creamy sauce, add the cream and let boil a minute more.
The sauce should be done about the same time the pasta is done. If you get done earlier with it than the pasta, take it off the heat.
4 Once the pasta is done, and before draining the pasta, scoop out one cup of the pasta cooking liquid and reserve. Drain the pasta and add it to the skillet with the sauce. Add back some of the pasta cooking liquid to the pasta if it is a little dry. Add the smoked salmon, toasted pine nuts, parsley, and the remaining lemon zest. Season with freshly ground black pepper.


Recipe 2:Pasta with Salmon, Peas, and Pesto

Ingredients:
1 pound dried tagliatelle, or 1.5 pounds fresh
1 pound salmon fillet
1 tablespoon olive oil
1 cup vegetable stock
4 tablespoon pesto
1/2 pound frozen or fresh peas
1/2 cup plain yogurt
3 tablespoons chopped fresh parsley

Procedures:
1 Bring a pot of salty water to boil. Cook the pasta until al dente if dried, tender if fresh.
2 Meanwhile, in a second skillet or small pot, bring the stock to a boil and add the peas. Cook until the peas are tender, longer if fresh. Stir in the pesto and season with salt and pepper.
3 In the meantime, heat a large skillet over medium-high heat. Add the olive oil, then cook the salmon skin-side up until 3/4 cooked through. Flip and finish cooking. The skin should remove easily from the fish. Discard the skin and flake the salmon gently.
4 Drain the pasta and return to its cooking pot. Add the yogurt along with the pea and pesto mixture and the chopped parsley. Toss well to combine, then stir in the salmon chunks. Divide into bowls and serve immediately with fresh black pepper.


Recipe 3:Creamy Smoked Salmon Pasta

Ingredients:
 6 tablespoons butter
 1/2 onion, finely chopped
 2 tablespoons all-purpose flour
 2 teaspoons garlic powder
 2 cups skim milk
 1/2 cup grated Romano cheese
 1 cup frozen green peas, thawed and drained
 1/2 cup canned mushrooms, drained
 10 ounces smoked salmon, chopped
 1 (16 ounce) package penne pasta

Directions:
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Melt butter in a large skillet over medium heat. Saute onion in butter until tender.
Stir flour and garlic powder into the butter and onions. Gradually stir in milk. Heat to just below boiling point, and then gradually stir in cheese until the sauce is smooth. Stir in peas and mushrooms., and cook over low heat for 4 minutes.
Toss in smoked salmon, and cook for 2 more minutes. Serve over pasta.
