Recipe 1: leftover salmon Thai curry

Ingredients:
1-2 tbsp sunflower oil
1 onion, roughly chopped
1 red pepper, halved, de-seeded and sliced into strips
1-2 tsp red Thai curry paste
1 lemon grass stalk, trimmed and finely chopped
400ml can coconut milk
1 tbsp brown sugar
1 tbsp fish sauce
Juice of ½-1 lime
Large handful of spinach leaves
Two handfuls of leftover cooked salmon, in chunky pieces
Coriander leaves, for garnish

Method:
1. Heat oil in a large frying pan, add onion and pepper, cook for 3-4 mins, remove and put to one side. Add remaining oil, if needed, and Thai paste, stirring for a few seconds. Add lemon grass and stir for a few more seconds. Pour in coconut milk, add sugar, stir and bring to the boil.
2. Simmer for 5 mins until beginning to thicken. Add fish sauce and lime juice and season with salt. Simmer for a few more mins, then taste and adjust, adding more lime juice, sugar or fish sauce, as required.
3. Return onion and pepper to sauce and add spinach, stirring until it wilts. Carefully add salmon and serve topped with coriander leaves.

Recipe 2: leftover salmon and lentils

Ingredients:
200g/7oz puy lentils, rinsed
1 onion, halved and finely sliced
1 clove garlic, finely chopped
Handful of fresh dill, roughly chopped
100g pack of ready-cooked beetroot, roughly chopped
2 handfuls of leftover cooked salmon, torn into large chunks
2tbsp red wine vinegar
1tbsp extra-virgin olive oil
1tsp capers, chopped
2 anchovy fillets, finely chopped

Method:
1. First make dressing; mix all ingredients together, season well and put to one side.
2. Add lentils to a pan, cover with plenty of cold water, add a pinch of salt, bring to the boil, then reduce to a simmer. Cook for about 30 mins or until tender, drain and set aside.
3. Add onion and garlic to dressing mix, stir and put to one side. Toss warm lentils with dressing, add dill and mix. Then add beetroot and salmon and turn to coat. Leave to cool, then put in fridge until ready to serve. Serve at room temperature.

Recipe 3: salmon fish pie

Ingredients:
900g/1½Ib potatoes, peeled and quartered
Knob of butter
3-4tbsp warm milk
1tbsp olive oil
2-3 leeks, sliced
Two handfuls of leftover cooked salmon, flaked into chunks
Knob of butter
1tbsp flour
About 450ml/1pt milk
2tsp grainy mustard
Handful of flat-leaf parsley leaves, finely chopped

Method:
1. Cook potatoes in salted water for about 15 mins. Drain and return to pan. Cover for a few mins, then mash well. Add butter and warm milk and mash until creamy. Set aside.
2. Melt butter in a pan and stir in flour. Trickle in milk, stirring with a balloon whisk. Season, stir in mustard and parsley and set aside.
3. Preheat oven to gas mark 5/190 °C (170 °C in a fan oven). Heat olive oil in a frying pan and add leeks. Season well, cook for 3-4 mins until softened, then transfer to an ovenproof dish with salmon. Add sauce, tumble together, then top with mashed potato. Fork over top to neaten. Bake for 25-30 mins until piping hot.

Recipe 4: Crunchy Salmon Sandwich Spread

Ingredients:
1 (5-ounce) cooked salmon filet, flaked
1/3 cup mayonnaise, regular or low-fat
1/3 cup grated Parmesan cheese
1 orange bell pepper, chopped
3 stalks celery, chopped
1/2 teaspoon dried marjoram leaves

Preparation:
Flake salmon and set aside. Combine mayonnaise and cheese in small bowl and mix well. Stir in salmon along with remaining ingredients. Use immediately or cover and chill up to 3 days.

Recipe 5: Salmon Croquettes

Ingredients:
2 cups mashed potatoes
9 oz (smoked) salmon
1/2 cup green peas
2 scallions
breadcrumbs
lemon juice
flat-leaf parsley
fresh dill
2 eggs
pepper
salt
egg
oil

Directions:
1. The leftover salmon. It was so divine. Don’t tell anyone, but you can also do this with canned salmon.
2. Used a fork to make the pieces smaller. Transfer it to a big bowl.
3. And add your mashed potatoes.
4. Used 1/2 cup frozen peas for this. 
5. Finely mince two scallions and add them to the bowl.
6. You can never go wrong with fresh herbs. Flat-leaf parsley and dill. Chop a good handful of both but don’t go overboard on the dill, it’s powerful stuff.
7. Add the minced herbs to the bowl, squeeze in some lemon juice (a tbsp or two), and season with salt and freshly cracked black pepper. Want to get real fancy? Grate some of the lemon zest as well, that’s where all the flavor is.
8. This is completely optional but to me seafood needs a little old bay. Half a tsp or so.
9. Mix it up, cover the bowl and put it in the fridge for about an hour or so. Letting it firm up will help you shape the balls. Or triangles. Whatever rocks your boat.
10. Lightly beat two eggs.
11. And put your breadcrumbs in a bowl.
12. Grab a full dinner spoon of the filling and roll it in your hands.
13. Then dump the ball in the egg, shake off the excess egg and roll it around in the breadcrumbs. Repeat this process until you have two egg / breadcrumb coatings.
14. Pour 1 liter/quart of oil (canola or even sunflower oil will do) into a pot, stick a candy/oil thermometer in there and wait ‘til the temperature is at 375F (180C).
15. Carefully put the croquettes into the hot oil and fry them until crispy and brown, this will take 3 to 4 minutes. Don’t overcrowd the pan, that will make the temperature drop and it’ll become a greasy, soggy mess. Let them drain on a paper towel and serve them with lemon mayonnaise.
